Homestyle Skillet Chicken

From one of my mom's cookbooks, i think favorite brand names recipes. I haven't tried it but it sounds very good. Can use new potatoes instead of red.

From one of my mom's cookbooks, i think favorite brand names recipes. I haven't tried it but it sounds very good. Can use new potatoes instead of red.

Ingredients

  • Chicken Thighs
  • Cajun Seasoning
  • Black Pepper
  • Salt
  • Vegetable Oil
  • Garlic Cloves
  • Red Potatoes
  • White Pearl Onions
  • Baby Carrots
  • Celery
  • Red Bell Pepper
  • All-purpose Flour
  • Chicken Broth
  • Fresh Parsley

Instructions

  1. Combine cajun seasoning, 1 / 2 teaspoons pepper and 1 / 4 teaspoon salt in small bowl
  2. Rub mixture on all sides chicken
  3. Heat oil in large heavy skillet over medium-high heat
  4. Add garlic and chicken
  5. Cook until chicken is browned, about 3 minutres per side
  6. Transfer chicken to plate
  7. Set aside
  8. Add potatoes, onions, carrots, celery and bell pepper to skillet
  9. Cook and stir 3 minutes
  10. Sprinkle flour over vegetables
  11. Stir to coat
  12. Slowly stir in chicken broth, scraping up browned bits from bottom of skillet
  13. Bring mixture to a boil, stirring constantly
  14. Reduce heat to medium-low
  15. Return chicken to skillet
  16. Cover and cook about 30 minutes or until juices of chicken run clear
  17. Increase heat to medium-high
  18. Cook, uncovered, about 5 minutes or until sauce is thickened
  19. Season with remaining 1 / 4 teaspoon salt and 1 / 8 teaspoon pepper
  20. Sprinkle with parsley before serving
