Ingredients

  • Golden Raisins
  • Light Rum
  • Flour
  • Baking Powder
  • Salt
  • Butter
  • Sugar
  • Eggs
  • Vanilla
  • Cream

Instructions

  1. Combine raisins and rum
  2. Cover and stand until rum is absorbed
  3. Stir together: flour, baking powder, salt
  4. Blend butter, sugar, eggs, and vanilla in a large bowl on low speed
  5. Beat on high speed for 5 minutes, scraping down sides often
  6. Add dry ingredients to creamed mixture alternatly with cream
  7. Stir in raisins and turn into baking pans
  8. Preheat oven to 350 degrees and bake: 12 cup bundt pan 70 to 80 minutes
  9. Or 2-6 cup bundt pan 40 to 45 minutes
  10. This cake gets very brown on top
  11. Cool 10 minutes, then remove from pans
  12. Brush with rum & butter glaze
  13. Allow cake to absorb and repeat until glaze is used up
  14. Glaze: melt cup butter in saucepan
  15. Add 1 cup sugar and cup water
  16. Boil for 5 minutes, stirring constantly
  17. Remove from heat and stir in cup rum
  18. Cool slightly
