Hoisin Glazed Chicken With Cabbage Slaw

Ingredients

  • Boneless Skinless Chicken Cutlets
  • Hoisin Sauce
  • Low Sodium Soy Sauce
  • Rice Vinegar
  • Fish Sauce
  • Green Cabbage
  • Red Bell Pepper
  • Green Bell Pepper
  • Scallions
  • Fresh Cilantro Leaves

Instructions

  1. Heat broiler on high
  2. Rinse the cutlets and pat dry with paper towls
  3. Pound the cutlets to an even thinness
  4. Place on a broiler pan
  5. In a small bowl, whisk together the hoisin sauce, soy sauce, 1 t
  6. Of the rice vinegar, and the fish sauce
  7. Transfer 2 t
  8. Of the glaze to a large bowl and stir in the remaining rice vinegar
  9. Add the cabbage, peppers, scallions, and cilantro and toss
  10. Cover and refrigerate
  11. Pour about 1 t
  12. Of the remaining glaze into a small bowl
  13. Set aside as a finishing sauce
  14. Brush the chicken with the glaze that remains
  15. Broil, brushing occasionally, until cooked through, 5 to 8 minutes
  16. Spoon the reserved glaze over the top
  17. Serve with the slaw
