This recipe was actually not a hard one for me. It's very much by the ozarks and would be a filling meal. The farfel recipe has a different name, but consider it much like dumplings. Enjoy!

This recipe was actually not a hard one for me. It's very much by the ozarks and would be a filling meal. The farfel recipe has a different name, but consider it much like dumplings. Enjoy!

Ingredients

  • Beef Tips
  • Sweet Onion
  • Dried Basil
  • Oregano
  • Garlic
  • Farfel
  • Chicken Stock
  • Beans
  • Fingerling Potato
  • Catsup
  • All-purpose Flour
  • Flax Seed
  • Salt
  • Eggs

Instructions

  1. Make the farfel recipe first
  2. In a bowl, combine flour, ground flaxseed and salt
  3. Mix well
  4. Turn out onto counter
  5. Make a space in the center of the dough, break eggs into well
  6. Beat eggs with a fork, slowly bringing flour and flaxseed into mixture
  7. As the dough starts to thicken, use your hands to form a ball
  8. Knead 2 minutes
  9. Dough will be stiff
  10. Coverr under a bowl for 20 minutes
  11. Move onto a floured surfaceand coat mixture with flour
  12. Shake off excess flour
  13. While the farfel is sitting under the bowl, begin the rest of the soup recipe
  14. Brown the beef
  15. Drain off fat
  16. Add onion, basil, oregano, and garlic and simmer about 3 minutes on low heat
  17. Transfer into a large pot the meat mixture and add the chicken stock on low heat
  18. Stir in the farfel, cook until done for approximately 6-8 minutes
  19. Add the beans and catsup
  20. Allow to simmer another 5-10 minutes
  21. Transfer to bowls and serve with parmesan or swiss cheese
