Ingredients

  • Red Potatoes
  • Salt
  • Bacon
  • Onion
  • Cornstarch
  • Sugar
  • Pepper
  • Cider Vinegar
  • Water
  • Fresh Parsley
  • Celery Seed
  • Radish
  • Celery Leaves

Instructions

  1. Cook potatoes, in boiling water and 1 teaspoon salt, until tender, about 35 minutes
  2. Drain potatoes, then peel and dice or partially mash
  3. Fry bacon in a skillet until crisp
  4. Add onions and saute until softened, but not browned
  5. In a bowl, combine cornstarch or flour, sugar, 1 teaspoon salt and pepper
  6. Stir in the vinegar and water until smooth
  7. Add mixture to bacon and simmer and stir until thickened
  8. Pour the hot dressing over the potatoes and add 1 / 4 cup minced onion, parsley, celery seeds, and radishes
  9. Lightly toss
  10. Garnish with celery leaves
