Ingredients

  • All-purpose Flour
  • Baking Powder
  • Salt
  • Ground Ginger
  • Ground Nutmeg
  • Ground Cloves
  • Raisins
  • Brown Sugar
  • Vegetable Oil
  • Molasses
  • 1% Low-fat Milk
  • Egg Whites
  • Canned Pumpkin

Instructions

  1. Sift together flour, baking powder, salt and spices
  2. Add raisins and stir to coat with flour
  3. Set aside
  4. Mix brown sugar, oil and molasses
  5. Add milk, egg, and pumpkin
  6. Blend well
  7. Stir in flour mixture, blending only until flour disappears
  8. Fill greased muffin pans
  9. Bake at 375 degrees f for 16 to 18 minutes
