Breakfast muffins made with heart-healthy olive oil and oat bran, and are low in fat, while still tasting delicious. Try them!!!

Ingredients

  • 2% Low-fat Milk
  • Cider Vinegar
  • Flour
  • Oat Bran
  • Light Brown Sugar
  • Baking Powder
  • Baking Soda
  • Cinnamon
  • Salt
  • Eggs
  • Apple Juice
  • Olive Oil
  • Apple
  • Fresh Ginger
  • Apples

Instructions

  1. Heat oven to 425 degrees
  2. Line muffin cups of standard muffin pan with paper liners or spray with non-stick cooking spray
  3. In a measuring cup combine milk and vinegar
  4. Set aside
  5. In a large bowl combine 7 dry ingredients
  6. Make a well in the center
  7. Set aside
  8. In a medium bowl, combine milk and next 5 ingredients
  9. Pour wet mixture into the well of the dry ingredients and mix until just combined and slightly lumpy
  10. Pour into muffin pan
  11. Make the streusel topping by combining flour and cinnamon
  12. Stir in oil until mixture represents course crumbs
  13. Stir in apple
  14. Sprinkle over batter
  15. Bake 15-18 minutes, or until tops are golden and toothpick comes out clean
  16. Cool for 5 minutes in pan on rack
  17. Remove from pan and cool completely
