A yummy, healthy treat

Ingredients

  • Cornmeal
  • All-purpose Flour
  • Baking Soda
  • Baking Powder
  • Salt
  • Sugar
  • Eggs
  • Low-fat Buttermilk
  • Yogurt
  • Olive Oil

Instructions

  1. Preheat oven to 400f grease a 12 cup muffin tin
  2. Whisk together cornmeal, flour, baking soda, baking powder, salt and sugar in a large bowl
  3. Whisk together eggs, buttermilk, yogurt and oil
  4. Pour buttermilk mixture into cornmeal mixture and stir until just combined
  5. Fill each muffin cup 2 / 3 full with batter
  6. Bake for 15-18 minutes, until tester just comes out clean
  7. Do not overbake!
  8. Turn out to cool on a wire rack
  9. Eat with chili or butter and honey
  10. Or both
