Ingredients

  • All-purpose Flour
  • Whole Wheat Flour
  • Sugar
  • Baking Powder
  • Baking Soda
  • Salt
  • Butter Substitute
  • Egg
  • Low-fat Buttermilk
  • Vanilla
  • Blueberries

Instructions

  1. Preheat oven to 375 degrees
  2. Line a large baking sheet with a silicone mat or parchment paper
  3. Combine flour, sugar, baking powder, baking soda and salt in a large bowl
  4. Cut butter into flour mixture with a pastry blender or two knives until it resembles a coarse crumbs
  5. Add egg, buttermilk and vanilla
  6. Stir with a fork until a dough forms
  7. Fold in blueberries
  8. Drop by tablespoonfuls onto prepared baking sheet
  9. Bake for 12-14 minutes
  10. Yield 24 small scones
