Ingredients

  • Walnuts
  • Raisins
  • Mango
  • Papaya
  • Whole Wheat Flour
  • Canola Oil
  • Vanilla
  • Salt
  • Eggs
  • Egg White
  • Crushed Pineapple

Instructions

  1. Combine: walnuts
  2. Raisins
  3. Dried mango
  4. Dried papaya
  5. Whole-wheat flour
  6. Mix well
  7. Combine: oil
  8. Vanilla or 1 tsp
  9. Coconut extract
  10. Salt
  11. Whole eggs
  12. Egg white
  13. Pineapple, mix well
  14. Add liquid to dry, mix well
  15. Spoon into sprayed 9×5 loaf pan
  16. Bake 350, approx
  17. 1 hr or till center comes out clean w / knife
  18. Cool on rack
  19. Take out of pan, wrap tightly, refrigerate till cold
  20. Cut in 16 slices
  21. Stores up to 2 weeks
