Perfect summer side dish for grilled or roasted meats.

Ingredients

  • Vegetable Stock
  • Wild Rice
  • Celery Ribs
  • Apple
  • Walnuts
  • Golden Raisin
  • Red Onion
  • Fresh Basil
  • Extra Virgin Olive Oil
  • White Wine Vinegar
  • Honey
  • Dijon Mustard
  • Salt

Instructions

  1. Bring water and rice to a boil in a medium saucepan
  2. Reduce heat and simmer, covered, for 45 minutes or until rice is tender and splitting open
  3. Drain excess water and let cool
  4. Place cooled rice in a large bowl with celery, apple, walnuts, raisins, onion and basil
  5. Pour dijon vinaigrette dressing over salad and toss well
  6. Season to taste with pepper
  7. Cover and refrigerate for 1 hour, stirring once or twice
