Ingredients

  • Ham Hocks
  • Dried Lima Beans
  • Water
  • Onions
  • Celery
  • Brown Sugar
  • Dry Mustard
  • Salt

Instructions

  1. Put the lima beans in a kettle with the water
  2. Bring to a full boil and boil for 2 minutes
  3. Remove from heat and allow them to stand, covered, for 1 1 / 2 hours
  4. Then add the ham hocks, onions, and celery
  5. Season with brown sugar, mustard, and salt
  6. Cover and simmer for 2 hours
  7. Remove meat from bones, keeping it in large pieces
  8. Skim excess fat from top of sauce
  9. Return meat to kettle
