Ham And Asparagus Crepes

Ingredients

  • All-purpose Flour
  • Skim Milk
  • Egg
  • Salt
  • Dried Thyme
  • Nonstick Spray Coating
  • Carrot
  • Leek
  • Water
  • Evaporated Skim Milk
  • Cornstarch
  • Pepper
  • Dry Sherry
  • Cheddar Cheese
  • Asparagus Spears
  • Ham

Instructions

  1. For crepes, combine flour, milk, egg, thyme and salt
  2. Beat until blended
  3. Spray a 6-inch skillet with nonstick spray coating
  4. Preheat skillet
  5. Then remove skillet from heat
  6. Pour in 2 tablespoons batter
  7. Lift and tilt skillet to spread batter
  8. Return to heat
  9. Brown on one side only
  10. Invert skillet over paper towels
  11. Remove crepe
  12. Repeat with remaining batter
  13. For sauce heat carrot, leek, and water to boiling
  14. Reduce heat
  15. Cover and simmer 5 minutes
  16. Do not drain
  17. Combine milk, cornstarch, salt, and pepper
  18. Stir into vegetable mixture
  19. Cook and stir until thickened and bubbly
  20. Stir in sherry and 1 / 2 cup of the cheese until melted
  21. For filling, combine ham and asparagus and 1 cup of the sauce
  22. Spoon 2 spears and 1 ham strip onto unbrowned side of each crepe
  23. Roll up
  24. Arrange crepes, seam side down, in a 3-quart rectangular baking dish
  25. Spoon remaining sauce over crepes
  26. Cover
  27. Bake in a 375 degree f
  28. Oven 25 minutes or until hot
  29. Sprinkle with remaining cheese
  30. Bake, uncovered, 5 minutes more
