Ingredients

  • Haddock Fillets
  • Lemon Juice
  • Salt
  • Olive Oil
  • Butter
  • Bacon
  • Yellow Onions
  • Garlic Clove
  • Italian Seasoned Breadcrumbs
  • Flat Leaf Parsley
  • Capers
  • Plum Tomatoes

Instructions

  1. Preheat the oven to 400 degrees f
  2. Rinse fish and pat dry
  3. Sprinkle fish with lemon juice and salt
  4. Coat an oven-safe handled large skillet with a drizzle of olive oil and a little softened butter
  5. If your skillets all have rubber handles, coat handle twice with tin foil and it should be fine in the oven
  6. Set portioned fish into skillet
  7. Heat a small skillet over medium high heat
  8. Add a drizzle of olive oil and the bacon
  9. Render the fat in the bacon 3 minutes then add onions
  10. Sweeten and soften onions and garlic 10 minutes
  11. Remove pan from heat
  12. Add bread crumbs to the pan and turn them to coat them in drippings
  13. Add parsley and capers combine
  14. Top fish with coating of onions, bacon and bread crumbs
  15. Bake 15 minutes
  16. Transfer fish to dinner plates and top with chopped tomato
