Grilled Salmon Fajita Packets

Southwestern style salmon cooked in foil packets. Can be cooked on the bbq or in the oven.

Ingredients

  • Skinless Salmon Fillet
  • Lime, Juice Of
  • Fajita Seasoning Mix
  • Flour
  • Bell Peppers
  • Onion
  • Black Beans
  • Green Chili Salsa
  • Tortilla
  • Salsa
  • Monterey Jack Cheese

Instructions

  1. Preheat grill to medium high or oven to 450f
  2. Cut salmon crosswise into 1 / 2 inch s
  3. Toss salmon with fajita seasoning and flour
  4. In a bowl, combine peppers, onions, beans and salsa
  5. Tear off 4 sheets heavy duty aluminum foil
  6. Center 1 / 4 of the vegetable mixture on each sheet
  7. Top each with 1 / 4 of the salmon
  8. Fold up foil to form packets and seal edges
  9. Grill 9-11 minutes covered or bake on a cookie sheet 25-30 minutes
  10. Serve with tortillas, salsa and cheese if desired
