This is a simple and good recipe from bettycrocker.com. Note: this recipe is even better if you double the cheese and bread crumbs. Or, if you would like to cut the calories down, toss the potatoes with some seasonings (we like garlic salt and pepper), the breadcrumbs and a drizzle of olive oil, and omit the butter and cheese.

Ingredients

  • Potatoes
  • Salt
  • Italian Style Breadcrumbs
  • Parmesan Cheese
  • Butter
  • Dried Basil Leaves

Instructions

  1. Heat gas or charcoal grill
  2. Cut 2 sheets of heavy-duty foil
  3. Divide potato slices evenly onto foil sheets
  4. Sprinkle with salt and melted butter
  5. In small bowl, mix remaining ingredients
  6. Sprinkle over potatoes
  7. Bring up 2 sides of foil so edges meet
  8. Seal edges, making tight 1 / 2-inch fold
  9. Fold again, allowing space for heat circulation and expansion
  10. Fold other sides to seal
  11. Place packets, seam side up, on grill
  12. Cover grill
  13. Cook over medium heat 18 to 23 minutes, rotating packets once, until potatoes are tender
  14. To serve, place packets on plates
  15. Cut large x across top of each packet
  16. Carefully fold back foil to allow steam to escape
