Light soup thats good and good for you.
Ingredients
- Quick-cooking Barley
- Onion
- Celery
- Pepper
- Garlic Cloves
- Potatoes
- Spinach
- Chicken Stock
- Artichoke Hearts
Instructions
- Cook the barley in the stock for about 15 minutes
- Add onion, celery, pepper and garlic and cook 15 minutes
- Add potatoes and simmer till the potatoes are almost done
- Add your greens and cook 5-7 minutes
- You can mix whatever greens you like
- If using artichokes, add when you add your greens
- Taste and correct seasoning
- You may need to add additional stock as you cook
