Green And White Linguini With Smoked Salmon And Mushroom Sauce

I couldn't resist this, since it combines some of my favorite foods (pasta, smoked salmon, and mushrooms).

I couldn't resist this, since it combines some of my favorite foods (pasta, smoked salmon, and mushrooms).

Ingredients

  • Butter
  • Shallots
  • Porcini Mushroom
  • Salt
  • White Pepper
  • Smoked Salmon
  • Heavy Cream
  • Fresh Linguine
  • Parmesan Cheese

Instructions

  1. Heat 3 t
  2. Butter in a small saute pan
  3. Saute shallots until translucent
  4. Add mushrooms
  5. Turn heat to high, add salt and pepper, and cook until tender
  6. Lower heat
  7. Add salmon and stir rapidly
  8. Add half the cream and continue cooking until thickened and reduced by half
  9. Meanwhile, bring a large pot of water to a rapid boil, salt water, and add linguini
  10. Cook until al dente, about 2-3 minutes
  11. Drain
  12. Place a serving casserole over low heat
  13. Melt remaining 3 t
  14. Butter, then add rest of cream
  15. Combine
  16. Add cooked linguini, and stir constantly while mixing in about half of the salmon and mushroom sauce
  17. Add grated cheese and stir well
  18. Remove from heat and pour remaining sauce over linguini
  19. Serve immediately
