Ingredients

  • Cannellini Beans
  • Fresh Rosemary
  • Garlic Clove
  • Extra Virgin Olive Oil
  • Black Pepper
  • Tomatoes
  • Seedless Cucumber
  • Red Onion
  • Kalamata Olive
  • Fresh Flat-leaf Parsley
  • Mixed Greens
  • Lemon, Juice Of
  • Coarse Salt
  • Pita Breads
  • Feta Cheese

Instructions

  1. Combine beans, rosemary, garlic, olive oil and black pepper in a food processor or blender
  2. Pulse until smooth
  3. Combine tomatoes, cucumber, onion, olives, parsley, greens and lemon juice in a bowl
  4. Drizzle with olive oil, and sprinkle with salt
  5. Combine well
  6. Warm pitas or wraps in oven or on a griddle pan
  7. Spread pitas with a generous dose of white bean hummus
  8. Top with a layer of greek salad mixture
  9. Sprinkle with feta cheese, and roll
  10. Wrap lower half of wraps with foil or waxed paper to keep them together while you eat your way down
