Rib-sticking and economical with a mediterranean flair! Serve with warm pita breads and crisp greek salad!

Ingredients

  • Olive Oil
  • Onions
  • Carrots
  • Celery Ribs
  • Fresh Parsley
  • Dill Weed
  • Tomato Paste
  • Water
  • Great Northern Bean
  • Salt And Pepper
  • Fresh Lemon Juice

Instructions

  1. Heat olive oil in large pot
  2. Add onions, and saute until tender
  3. Add carrots, celery, parsley, and dill weed
  4. Cook until carrots are glazed, 5-7 minutes
  5. Mix in tomato paste, water, and beans
  6. Season to taste with salt and pepper
  7. Bring to a boil, then reduce heat and cover
  8. Simmer over low heat 1 or more hours or until beans are tender
  9. Stir in lemon juice, if desired, just before serving
