Roasted pine nuts add a southwestern accent to this lightly sweetened granola. A good healthy snack for kids. The recipe comes fron bon appetit.

Ingredients

  • Oats
  • Nonstick Cooking Spray
  • Sweetened Coconut
  • Pine Nuts
  • Sunflower Seeds
  • Unsalted Cashews
  • Salted Macadamia Nut
  • Sesame Seeds
  • Pure Maple Syrup
  • Canola Oil
  • Dark Corn Syrup
  • Light Molasses
  • Raisins

Instructions

  1. Preheat oven to 300 degrees
  2. Place on large rimmed baking sheet
  3. Bake until oats are lightly toasted, stirring occasionally, about 15 minutes
  4. Transfer baked oats to large bowl
  5. Increase oven temperature to 350 degrees
  6. Spray same baking sheet with nonstick cooking spray
  7. Mix coconut, all nuts and seeds into baked oats
  8. In small bowl, whisk together maple syrup, oil, corn syrup and molasses
  9. Pour over oat mixture
  10. Toss to coat evenly
  11. Spread granola on prepared baking sheet
  12. Bake 12 minutes, mix in raisins
  13. Bake until deep golden, about 12 minutes longer
  14. Cool granola on sheet, leave in large chunks for snack or crumble for cereal topping
  15. Store in airtight container, will keep for up to one week, if stored airtight
