Ingredients

  • Bacon
  • Red Onion
  • Gnocchi
  • Flat Leaf Parsley
  • Cherry Tomatoes
  • Salt
  • Pepper
  • Parmesan Cheese

Instructions

  1. Heat a medium skillet over medium heat
  2. Add bacon and onion
  3. Cook, stirring often, until onion starts to brown, about 10 minutes
  4. Meanwhile, heat a large saucepan of water to a boil
  5. Add gnocchi, cook according to package directions
  6. Drain, reserving about 1 / 2 of the cooking water
  7. Add some of the cooking water to the skillet
  8. Cook, stirring, to make a sauce
  9. Add parsley, tomatoes, salt and pepper
  10. Heat, about 1 minute
  11. Add gnocchi
  12. Toss to coat
  13. Serve with parmesian cheese, if desired
