My husband and youngest two like these, our eldest doesn't. If you don't like brown sugar just substitute with more white. I use australian metric measurements.

My husband and youngest two like these, our eldest doesn't. If you don't like brown sugar just substitute with more white. I use australian metric measurements.

Ingredients

  • Rice Flour
  • Potato Flour
  • Cornflour
  • Bicarbonate Of Soda
  • Baking Powder
  • Xanthan Gum
  • Salt
  • Mashed Banana
  • Egg
  • Canola Oil
  • Honey
  • Butter
  • White Sugar
  • Brown Sugar

Instructions

  1. Preheat oven to 180c or 160c for fan forced
  2. Lightly grease muffin pan
  3. Sift flours, bicarb, baking soda, xantham gum and salt together, set aside
  4. In a separate large mixing bowl, mash banana, add egg, canola oil, honey, butter and sugars, mix well
  5. Add dry ingredients to wet ingredients, mix until well combined
  6. Spoon into prepared muffin pan, bake for 20mins
  7. Cool on cooling rack
  8. Serve warm or cool, with or without butter
