This is my gingery variation on my neighbor's recipe.

Ingredients

  • Plums
  • Water
  • Sugar
  • Fresh Lemon Juice
  • Fresh Ginger
  • Fresh Lemon Rind

Instructions

  1. Combine plums and water in a dutch oven, and bring to a boil
  2. Reduce heat, and simmer, uncovered, 20 minutes or until tender
  3. Stir in sugar, juice, ginger, and rind
  4. Cook over medium heat 40 minutes, until thick or a candy thermometer reaches 210
  5. Stir mixture occasionally
  6. Cool
  7. Discard lemon rind
  8. Store in an airtight container in the refrigerator up to 2 weeks
