Well, i just found this recipe while trying to decide what to cook tonight, and i as soon as i did, i knew this was it. From cooking light.

Ingredients

  • Olive Oil
  • Boneless Skinless Chicken Breast Halves
  • Cucumber
  • Red Bell Pepper
  • Sugar
  • Fresh Ginger
  • Fresh Lime Juice
  • Low Sodium Soy Sauce
  • Salt
  • Ground Red Pepper
  • Garlic
  • Creamy Peanut Butter
  • Water
  • Fresh Cilantro
  • 8-inch Fat-free Flour Tortillas
  • Romaine Lettuce

Instructions

  1. Heat oil in a large nonstick skillet over medium-high heat
  2. Add chicken
  3. Cook 5 minutes on each side or until done
  4. Remove the chicken from pan
  5. Cool
  6. Shred the chicken into bite-size pieces
  7. Place chicken, cucumber, and bell pepper in a large bowl
  8. Set aside
  9. Place sugar and the next 6 ingredients in a blender, and process until smooth
  10. Add peanut butter and water
  11. Process until smooth, scraping sides
  12. Add peanut butter mixture to chicken mixture
  13. Stir well
  14. Add cilantro, and toss well
  15. Warm tortillas according to package directions
  16. Spoon 1 / 2 cup chicken mixture onto each tortilla
  17. Top each serving with 1 / 2 cup lettuce, and roll up
