Ginger Beets

I love roasted beets and this is another way i like to prepare them. This recipe is from the vancouver sun, six o'clock solutions cookbook.

Ingredients

  • Beets
  • Raisins
  • Butter
  • Gingerroot
  • Sugar
  • Red Wine Vinegar
  • Lime Rind

Instructions

  1. Preheat oven to 375 degrees
  2. Carefully scrub the beets clean trimming off the leaves and the long root
  3. Tightly wrap beets in aluminnum foil and place in oven for 40-50 minutes or until the beets are tender and the skin is loose
  4. Remove from oven and cut a slit in the foil to allow the steam to escape
  5. Allow the beets to cool enough so that you can handle them
  6. Trim the ends and peel the skin
  7. The skin should slip of quite easily
  8. Cut the beets into chunks
  9. Soak raisins in hot water for 5 minutes
  10. Drain
  11. Melt butter in large skillet over medium high hat
  12. Stir in ginger and cook for one minute, stirring constantly
  13. Stir in raisins, sugar and vinegar
  14. Add beets and cook until warmed through, stirring frequently
  15. Place on platter and sprinkle with lime rind
