Gemelli With Chicken And Vegetables In Tomato Basil Cream Sauce

Ingredients

  • Chicken Breast
  • Olive Oil
  • Onion
  • Carrot
  • Red Bell Pepper
  • Garlic Clove
  • Heavy Cream
  • Tomatoes
  • Tomato Paste
  • Parmesan Cheese
  • Fresh Basil
  • Sugar
  • Cayenne
  • Salt
  • Pepper
  • Gemelli Pasta

Instructions

  1. Heat the olive oil in a large skillet over medium heat
  2. Add the chicken and brown on all sides
  3. Remove chicken with a slotted spoon and set aside
  4. In the same skillet, add the onion, carrot and bell pepper
  5. Cook and stir until soft, about 8 minutes
  6. Add the garlic and cook for 1 minute longer
  7. Pour in the heavy cream
  8. Stir in the tomato, tomato paste and parmesan
  9. Add the basil and sugar
  10. Bring the mixture to a boil
  11. Season with cayenne, salt and pepper, to taste
  12. Add the chicken and reduce heat to low
  13. Cover and cook until the chicken is cooked through, about 10 minutes
  14. Once chicken is cooked through, stir in the gemelli pasta
  15. Serve and enjoy!
