This is a meal from the australian super food ideas magazine, dec 2007. My husband has made this a couple of times already – it is so quick and super fast to slap together. The taste is absolutely divine. One of our favourites and i asked for it for our anniversary dinner. Enjoy!

Ingredients

  • Spaghetti
  • Red Onion
  • Shrimp
  • Garlic Cloves
  • Dry White Wine
  • Lemon Rind
  • Lemon Juice
  • Fresh Parsley Leaves
  • Feta Cheese

Instructions

  1. Cook pasta in large saucepan of boiling water following packet directions until tender
  2. Meanwhile, heat oil in large non-stick frying pan over medium-high heat
  3. Add onion
  4. Cook, stirring, for 3 minutes or until tender
  5. Add shrimp / prawns and garlic
  6. Cook, stirring for 2 minutes or until seafood is just pink
  7. Add wine and bring to the boil
  8. Simmer uncovered for 1minute or until shrimp / prawns are cooked through
  9. Remove from heat
  10. Add lemon rind and juice
  11. Drain pasta
  12. Return to pan on low heat
  13. Add shrimp / prawn mixture, parsley and feta
  14. Toss to combine
  15. Season with cracked pepper and serve with crusty bread and fresh green salad
