- Boiling Water
- Semi-sweet Chocolate Chips
- Butter
- All-purpose Flour
- Baking Powder
- Salt
- Sugar
- Egg
- Shortening
- Half-and-half Cream
- Sour Cream
- Pecans
- Mini Chocolate Chip
Instructions
- Set oven to 400 degrees
- Line 12 muffin cups with paper liners
- In the microwave, or in a small saucepan, over low heat, melt the 1 cup chocolate chips, and the butter with the 3 / 4 cup boiling water
- Stir constantly, until the chocolate and butter is melted and smooth
- Remove from heat
- In a bowl, sift together the flour, baking powder, salt and sugar
- To the flour mixture, stir in the egg, melted shortening, half and half, or milk if using and the sour cream, with the melted chocolate mixture
- Mix with a wooden spoon just until blended
- Fold in the chopped nuts, and the mini chocolate chips
- Fill the prepared muffin cups approx 3 / 4 full
- Bake 20-22 minutes, or until the muffins test done
- Cool 10 minutes, remove to wire rack
