Posted in response to a request to use some of that yummy flavored creamer. I love the taste of this in a cheesecake. Gives it a really rich taste

Ingredients

  • Chocolate Cookies
  • Granulated Sugar
  • Butter
  • Cream Cheese
  • French Vanilla Liquid Coffee Creamer
  • Eggs
  • Instant Coffee
  • All-purpose Flour
  • White Chocolate Chips
  • Sour Cream

Instructions

  1. Preheat oven to 350 degrees f
  2. Combine cookie crumbs and 1 / 4 cup sugar in small bowl
  3. Stir in butter
  4. Press onto bottom and 1 inch up side of ungreased 9-inch springform pan
  5. Bake 5 minutes
  6. Beat cream cheese and french vanilla liquid coffee creamer in large mixer bowl until creamy
  7. Combine eggs and instant coffee in medium bowl
  8. Stir until coffee is dissolved
  9. Add egg mixture, flour and remaining sugar to cream cheese mixture
  10. Beat until combined
  11. Pour into crust
  12. Bake for 45-50 minutes or until edges are set but center still moves slightly
  13. Microwave morsels in medium, microwave-safe bowl on medium-high power for 1 minute
  14. Stir
  15. Microwave at additional 10-20 second intervals, stirring until smooth
  16. Stir in sour cream
  17. Spread over top of cheesecake
  18. Bake 10 minutes
  19. Cool completely in pan on wire rack
  20. Refrigerate for several hours or overnight
