Franks Place Crawfish Etouffee

Ingredients

  • Butter
  • Tomatoes
  • Flour
  • Crawfish Tail Meat
  • Onions
  • Parsley
  • Green Onion
  • Salt
  • Celery
  • Black Pepper
  • Garlic
  • Pepper
  • Tomato Paste
  • Rice
  • Fish Stock

Instructions

  1. Melt butter in alrge saucepan over low heat
  2. Remove from heat and stir in flur until smooth
  3. Return to heat and cook, stirring, for 10 minutes, until roux is dark brown
  4. Stir in chopped white and green onions, celery and garlic
  5. Cook about 10 minutes
  6. Add tomato paste to fish stock
  7. Stir into onion mixture
  8. Add tomatoes, crayfish, parsley and seasonings
  9. Cover and simmer 20 minutes
  10. Serve over hot rice
