Four S Tomatoes Simple Shrimp Stuffed Salad

Good buy on pre-cooked medium sized shrimp....so i took advantage. This was one of the ways i used them. Tasty and really easy!

Good buy on pre-cooked medium sized shrimp….so i took advantage. This was one of the ways i used them. Tasty and really easy!

Ingredients

  • Medium Shrimp
  • Celery
  • Parsley
  • Creole Seasoning
  • Black Pepper
  • Reduced-fat Mayonnaise
  • Frozen Peas
  • Tomatoes
  • Salt
  • Lettuce Leaf

Instructions

  1. Remove 16 shrimp and set aside
  2. Coarsely chop rest of shrimp
  3. Mix with the next six ingredients and refrigerate
  4. Start with 1 tbls creole seasoning and taste before adding more
  5. The flavor increases some with standing
  6. To make tomato bowls:
  7. Decide which sides of the tomato will lay flatter
  8. Cut off thin strip to help this happen
  9. Cut off top and empty insides
  10. Lightly salt insides and turn upside down to drain
  11. Leave like this about fiftheen minutes
  12. Do not rinse
  13. Stand upright
  14. Cut in half from top to bottom making sure that the stripped side will now be the bottom
  15. Line 4 plates with lettuce leaves
  16. Fill each tomato half
  17. Place two halves on a plate
  18. Top each half with two whole shrimp and sprinkle with parsley
  19. Yum, yum — enjoy!
