Forevermama S Potato Casserole

I've been making this potato casserole for many years. It's a tried and true that i've made for many different occasions and weekend meals. It pairs well with all sorts of meats; roasted, grilled, saute'd, etc.

I've been making this potato casserole for many years. It's a tried and true that i've made for many different occasions and weekend meals. It pairs well with all sorts of meats; roasted, grilled, saute'd, etc.

Ingredients

  • Onion
  • Butter
  • Potatoes
  • Muenster Cheese
  • American Cheese
  • Flour
  • Salt
  • Black Pepper
  • Eggs
  • Half-and-half

Instructions

  1. One day ahead or a few hours before planning to cook this dish, cook whole unpeeled potatoes in a large pot covered with water
  2. Cook until tender
  3. Remove from pot and let cool completely
  4. Remove potato skin
  5. Grate potatoes
  6. Set aside
  7. In a large skillet, saut onion in butter until tender
  8. Remove from the heat
  9. Add potatoes
  10. In a bowl, toss cheese with flour, salt and pepper
  11. Add to skillet and blend well
  12. In a small bowl, combine the eggs and cream
  13. Stir into the potato mixture
  14. Spoon into a greased 9 inch square or round baking dish
  15. Bake uncovered, at 350 degrees f for 20 30 minutes or until golden brown
  16. Cool for 5 minutes before serving
