I've been using this recipe for 35 years and it turns out perfect every time. No need to worry about curdling the sour cream. Serve this over noodles or dumplings.

Ingredients

  • Frying Chicken
  • Flour
  • Salt
  • Pepper
  • Butter
  • Vegetable Oil
  • Onion
  • Instant Chicken Broth
  • Paprika
  • Water
  • Sour Cream
  • Whipping Cream

Instructions

  1. Shake chicken in flour, salt, and pepper in a plastic bag
  2. Coat well
  3. Save remaining flour for gravy
  4. Brown chicken, part at a time, in butter and oil in dutch oven
  5. Remove chicken when browned, pour off drippings, and return 1 tablespoonful to kettle
  6. Stir in onion and saut until soft
  7. Add water, instant chicken broth, and paprika
  8. Scraping brown bits from bottom of kettle, heat to boiling
  9. Return chicken to kettle, cover, and simmer 30 minutes or until chicken is tender
  10. Remove chicken to shallow pan and reheat broth to boiling
  11. Measure 2 tablespoons of saved flour and add water to make paste
  12. Stir into broth
  13. Cook, stirring constantly, until gravy thickens and boils 1 minute
  14. Blend sour cream and whipping cream in a small bowl and stir into gravy
  15. Return chicken and reheat slowly to boiling
  16. Serve over noodles or dumplings
