I like using natural colors,since i have two little kids and it's important to me what i'm feeding them.i tried the red one with the beets and the yellow with the onions skins.the ingredients listed are just for the red food color.everything else is found in the directions.

Ingredients

  • Beet
  • Water
  • Vinegar

Instructions

  1. Cover fresh beets with water and boil in an enamel or glass pan until barely done
  2. Remove the beets and peel, slice, and chop them, reserving the juice
  3. Return beets to the juice and soak them for 4 hours
  4. Strain liquid and measure out 3 / 4 cup
  5. Add the vinegar to the liquid
  6. If using canned beets, strain out 3 / 4 cup of the liquid and add 2 teaspoons of vinegar
  7. Red:
  8. 1 cup cranberries
  9. Water to cover
  10. Cover cranberries with water and boil for 2 hours, mashing the cranberries as they soften
  11. Strain liquid
  12. Yellow:
  13. Outer skins of 5 yellow onions
  14. 1 cup water
  15. Boil the dark, dry outer skins of yellow onions in a covered glass or enamel pan for 10 minutes, or until the liquid is dark yellow
  16. Strain the juice
  17. Yellow:1 cup daffodil, acacia, or crocus blossoms
  18. Water to cover
  19. Cover blossoms with water in an enamel or glass pan, bring to a boil, and simmer, covered, for 2 hours
  20. Strain liquid
  21. Blue:
  22. 1 / 2 head red cabbage, chopped
  23. 1 cup water
  24. Simmer the cabbage and water in a covered enamel or glass pan until the cabbage turns dark green and is just tender
  25. Strain the juice, which will be blue
  26. Blue:1 / 2 cup blueberries, fresh or canned
  27. Water to cover
  28. For a darker shade of blue, cover the fresh blueberries with water and simmer for 30 minutes
  29. Mash the berries and strain the juice
  30. If using canned blueberries, strain the juice
  31. Purple:
  32. 1 / 2 cup fresh-frozen blackberries
  33. Allow the frozen blackberries to soften at room temperature for 30 minutes, then blend for 30 seconds
  34. Green:
  35. Outer skins of 5 red onions
  36. 1 cup water
  37. Boil the outer skins of the onions in the water in a covered enamel or glass pan for 10 minutes
  38. Strain the juice
  39. Green:1 cup clean grass clippings, spinach, or moss
  40. Water to cover
  41. Cover the grass, spinach, or moss with water and boil in an enamel or glass pan for 1 minutes, and then simmer, covered, for 10 minutes
  42. Strain the liquid
  43. Brown:
  44. 1 cup coffee grounds or 10 tea bags
  45. 1 cup water
  46. Cover coffee grounds with water or add tea bags to water
  47. Simmer, uncovered, in an enamel or a glass pan for 30 minutes
  48. Strain the liquid
