Ingredients

  • Bananas
  • Sugar
  • Low-fat Vanilla Yogurt
  • Unsalted Butter
  • Vanilla Extract
  • Eggs
  • All-purpose Flour
  • Baking Powder
  • Baking Soda
  • Salt

Instructions

  1. Preheat oven to 350 f
  2. Lightly grease a dozen muffin tins or line with paper cups
  3. Place bananas, sugar, yogurt, melted butter, vanilla, and eggs together in a large mixing bowl and beat with a wooden spoon until smooth
  4. In a second bowl sift together flour, baking powder, baking soda, and salt
  5. Add dry ingredients to wet and mix until just combines
  6. Do not overmix, or the muffins will be tough
  7. Fill muffin cups three-quarters of the way full
  8. Bake for 25 to 35 minutes
  9. A toothpick inserted in the center of the muffins will come out clean when they are cooked
  10. Remove from the oven and cool slightly before eating
