Flounder With Spinach And Feta

Ingredients

  • Flounder Fillets
  • Garlic Cloves
  • Olive Oil
  • Fresh Mushrooms
  • Dried Italian Seasoning
  • Fresh Spinach
  • Feta
  • Tomatoes
  • Salt
  • Pepper

Instructions

  1. Preheat oven to 450 degrees f
  2. Lightly coat 2 quart baking dish with nonstick cooking spray
  3. Sprinkle fillets with salt and pepper to taste
  4. If fillets are thick, place in a single layer in the baking dish, tucking under any thin edges
  5. If using thin fillets, arrange evenly in baking dish, overlapping as necessary
  6. In a large skillet, cook garlic in hot oil for 15 seconds
  7. Add mushrooms and italian seasoning
  8. Cook and stir until mushrooms are tender
  9. Stir in spinach and cook and stir until just wilted
  10. Spoon this spinach mixture down the center of the of the fish in the baking pan
  11. Cover with foil
  12. Bake until fish flakes with a fork
  13. Transfer fish and vegetables to a serving platter and sprinkle with feta cheese
  14. Top with tomato if desired
