Flounder With Bananas Almonds And Rum

A requested favorite served at the black dog restaurant on martha's vineyard. This is a fun, tropical combination of ingredients and flavors. It's pretty healthy, too. Enjoy!

Ingredients

  • Flour
  • Kosher Salt
  • Fresh Ground Black Pepper
  • Flounder
  • Eggs
  • Canola Oil
  • Unsalted Butter
  • Sliced Almonds
  • Bananas
  • Rum
  • Ground Nutmeg
  • Salt & Freshly Ground Black Pepper

Instructions

  1. Warm oven to 200 degrees f
  2. Or lowest setting – to keep fish warm
  3. Mix the flour with the salt and pepper on a large plate
  4. Dredge the flounder in the flour, shake off excess, and dip in the beaten egg
  5. Combine the butter and oil in a large saute pan and put over med-high heat
  6. Add the flounder fillets and saute quickly, about 2-3 minutes per side
  7. Remove from the pan and set aside in a warm oven
  8. To the same pan, add the almonds and saute briefly, then add banana slices
  9. Hold pan away from the heat and add rum
  10. Never pour rum directly from the bottle into a hot pan, since it is highly flamable
  11. Return the pan to heat
  12. Add the butter and nutmeg – adjust seasoning
  13. Cook briefly and pour sauce over the flounder
  14. Enjoy!
