Flounder Fillets In Shrimp Sauce For Two

Ingredients

  • Flounder Fillets
  • Lemon Juice
  • Dry White Wine
  • Water
  • Small Shrimp
  • Butter
  • All-purpose Flour
  • Milk
  • Fresh Parsley
  • Salt
  • Dried Tarragon
  • Worcestershire Sauce
  • Sliced Mushrooms

Instructions

  1. Place fillets in a shallow dish
  2. Combine lemon juice and 1 tablespoon wine
  3. Pour over fillets
  4. Cover and chill at least 1 hour
  5. Bring water to a boil
  6. Add shrimp, and return to a boil
  7. Reduce heat and simmer, uncovered, 3 to 5 minutes or until shrimp are pink
  8. Drain well and rinse with cold water
  9. Peel and devein shrimp
  10. Set aside
  11. Melt butter in a heavy saucepan over low heat
  12. Add flour, stirring until smooth
  13. Cook 1 minute, stirring constantly
  14. Gradually add milk
  15. Cook over medium heat, stirring constantly, until thickened and bubbly
  16. Stir in next 6 ingredients and the shrimp
  17. Drain fillets
  18. Roll up
  19. Place seam side down in a lightly greased baking dish
  20. Pour sauce over top
  21. Bake, uncovered, at 375f for 25 minutes or until fish flakes easily, basting occasionally with sauce
  22. Yield: 2 servings
