Florentine Rolls

These are so yummy with spaghetti, or as an accompaniment to a soup like minestrone for a light meal. They take a little more time than i usually like to for a side, but they are well worth it!!

These are so yummy with spaghetti, or as an accompaniment to a soup like minestrone for a light meal. They take a little more time than i usually like to for a side, but they are well worth it!!

Ingredients

  • Green Onions
  • Garlic Cloves
  • Olive Oil
  • Baby Spinach
  • Fresh Basil
  • Salt
  • Fresh Ground Black Pepper
  • Pizza Dough
  • Feta Cheese
  • Pine Nuts
  • Butter
  • Parmesan Cheese

Instructions

  1. Preheat oven to 375
  2. Grease 12 muffin cups and set aside
  3. In a large skillet, heat 1 tablespoons oil and cook green onions and garlic until tender
  4. Add spinach and basil
  5. Cook and stir over medium heat until just wilted
  6. Drain off excess liquid
  7. Stir in salt and pepper
  8. Set aside to cool
  9. On a well-floured surface, unroll pizza dough and shape into a 12×8 rectangle
  10. Brush surface of dough with remaining olive oil
  11. Spread spinach mixture to within one inch of the edges of the dough
  12. Sprinkle with feta and pine nuts
  13. Starting with a long side, roll into a spiral
  14. Slice roll into 12 pieces and place cut-side up in prepared muffin cups
  15. Brush with butter and sprinkle with parmesan cheese
  16. Bake for 18-20 minutes or until golden brown
  17. Let stand in muffin cups for 2 minutes
  18. Remove carefully and serve warm
