Description
I have arrived at this recipe after starting with a flax muffin recipe for people on a candida diet and adapting it to suit my husband's desire to have bread without yeast, gluten, sugar or dairy. This makes a little loaf that rises a bit and can be cut into slices. It would be a tiny sandwich, but it makes nice bits of toast. He enjoys it with butter and sugar-free jam.
Ingredients
- Flax Seed Meal
- Buckwheat Flour
- Rice Flour
- Baking Powder
- Baking Soda
- Xanthan Gum
- Oil
- Eggs
- Soymilk
- Lemon Juice
Instructions
- Preheat oven to 180c or 350f grease a small loaf pan
- Mix together the flax meal, buckwheat flour, rice flour, baking powder, baking soda and xanthan gum
- The xanthan gum gives it a bit better texture, but could be eliminated
- In a separate bowl, beat the eggs and add the oil, soy milk and lemon juice
- Once the oven is to temperature, mix the wet and dry ingredients together, put in the pan, smoothing the top with a spatula
- Bake for 35-40 minutes
