I have arrived at this recipe after starting with a flax muffin recipe for people on a candida diet and adapting it to suit my husband's desire to have bread without yeast, gluten, sugar or dairy. This makes a little loaf that rises a bit and can be cut into slices. It would be a tiny sandwich, but it makes nice bits of toast. He enjoys it with butter and sugar-free jam.

Ingredients

  • Flax Seed Meal
  • Buckwheat Flour
  • Rice Flour
  • Baking Powder
  • Baking Soda
  • Xanthan Gum
  • Oil
  • Eggs
  • Soymilk
  • Lemon Juice

Instructions

  1. Preheat oven to 180c or 350f grease a small loaf pan
  2. Mix together the flax meal, buckwheat flour, rice flour, baking powder, baking soda and xanthan gum
  3. The xanthan gum gives it a bit better texture, but could be eliminated
  4. In a separate bowl, beat the eggs and add the oil, soy milk and lemon juice
  5. Once the oven is to temperature, mix the wet and dry ingredients together, put in the pan, smoothing the top with a spatula
  6. Bake for 35-40 minutes
