Our family loves mexican food, and this is one of our favorites.

Ingredients

  • Beef Flank Steak
  • Tomatoes And Green Chilies
  • Garlic Cloves
  • Jalapeno Pepper
  • Fresh Cilantro
  • Chili Powder
  • Ground Cumin
  • Salt
  • Sweet Red Pepper
  • Green Pepper
  • Flour Tortillas
  • Sour Cream
  • Salsa
  • Cheddar Cheese

Instructions

  1. Place beef in a slow cooker
  2. In a bowl, combine the tomatoes, garlic, jalapeno, cilantro, chili powder, cumin and salt
  3. Pour over beef
  4. Cover and cook on low for 7-8 hours
  5. Stir in red and green peppers
  6. Cook 1 hour longer or until meat and peppers are tender
  7. Thicken juices if desired
  8. Using a slotted spoon, place about 1 / 2 cup beef mixture down the center of each tortilla
  9. Fold sides over filling
  10. Serve with sour cream, salsa and cheese if desired
