Ingredients

  • Fresh Cilantro
  • Fresh Lime Juice
  • Water
  • Dried Oregano
  • Ground Cumin
  • Salt
  • Black Pepper
  • Crushed Red Pepper Flakes
  • Garlic Cloves
  • Onion
  • Flank Steak
  • Cooking Spray
  • Red Bell Pepper
  • Yellow Squash
  • Zucchini
  • Fresh Corn Kernels
  • Flour Tortillas
  • Chopped Tomatoes
  • Low-fat Sour Cream

Instructions

  1. Prepare the marinade: combine the first 9 ingredients in a small bowl
  2. Prepare fajitas: combine 1 / 3 cup marinade, onion, and steak in a large zip-top plastic bag
  3. Seal
  4. Marinate in refrigerator 1 hour, turning occasionally
  5. Remove steak mixture from bag
  6. Discard marinade
  7. Place a large nonstick skillet coated with cooking spray over medium-high heat until hot
  8. Add the steak mixture, and stir-fry 5 minutes
  9. Place the steak mixture in a large bowl, and keep warm
  10. Add bell pepper, squash, zucchini, corn, and remaining marinade to skillet
  11. Stir-fry 5 minutes or until vegetables are crisp-tender
  12. Add to steak mixture
  13. Toss gently
  14. Warm tortillas according to package directions
  15. Arrange 1 cup steak mixture, 1 / 3 cup tomato, and 1 teaspoon sour cream down center of each tortilla
  16. Roll up
