Five Cheese Chicken Breasts

Ingredients

  • Chicken Breasts
  • Swiss Cheese
  • Mozzarella Cheese
  • Ricotta Cheese
  • Parmesan Cheese
  • Egg Yolk
  • Flour
  • Egg
  • Dry Breadcrumbs
  • Butter
  • Milk
  • Worcestershire Sauce
  • Dry Sherry
  • Cheddar Cheese

Instructions

  1. Flatten the chicken breasts between plastic wrap with mallet
  2. On each breast place a slice of mozzarella and swiss cheese
  3. Mix ricotta and parmesan with egg yolk, place spoonful at wide end of breast
  4. Roll up breast and secure with toothpicks
  5. Roll each in flour and egg, and coat with crumbs
  6. Brown breasts in oil and butter
  7. Arrange in shallow baking dish
  8. Bake at 350 degrees for 20 minutes
  9. Cover with cheddar cheese sauce
  10. Cheddar cheese sauce: melt butter
  11. Stir in flour
  12. Add milk and cook, stirring, until thickened
  13. Stir in worcestershire sauce, dry sherry, and shredded cheddar cheese
  14. Stir till cheese has melted
