Ingredients

  • Green Onion
  • Fresh Cilantro
  • Fat-free Mayonnaise
  • Reduced-fat Sour Cream
  • Lime Rind
  • Fresh Lime Juice
  • Salt
  • Garlic Clove
  • Ground Cumin
  • Ground Coriander
  • Smoked Paprika
  • Ground Red Pepper
  • Garlic Powder
  • Red Snapper Fillets
  • Cooking Spray
  • Corn Tortillas
  • Cabbage

Instructions

  1. Preheat oven to 425
  2. To prepare crema, combine the first 8 ingredients in a small bowl
  3. Set aside
  4. To prepare tacos, combine cumin and next 5 ingredients in a small bowl
  5. Sprinkle spice mixture evenly over both sides of fish
  6. Place fish on a baking sheet coated with cooking spray
  7. Bake at 425 for 9 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness
  8. Place fish in a bowl
  9. Break into pieces with a fork
  10. Heat tortillas according to package directions
  11. Divide fish evenly among tortillas
  12. Top each with 1 / 4 cup cabbage and 1 tablespoon crema
