Ingredients

  • Halibut Fillets
  • All-purpose Flour
  • Salt
  • Black Pepper
  • Eggs
  • Instant Potato Flakes
  • Fresh Dill
  • Lemon Rind
  • Cayenne
  • Butter
  • Lemon Wedge
  • Tartar Sauce

Instructions

  1. Fish fingers:
  2. Preheat oven to 350f / 180c
  3. Cut fish fillets into 1-inch wide strips
  4. In a bowl combine flour with half of the salt and pepper and place in a shallow dish
  5. Beat eggs and place in a shallow dish
  6. Combine potato flakes, remaining salt, dill, lemon rind and cayenne and place in a shallow dish
  7. Dredge fish in seasoned flour and shake off excess
  8. Dip into eggs
  9. Press into potato flakes
  10. Line a baking sheet with foil and brush with melted butter
  11. Place fish on baking sheet
  12. Turn fish and brush with butter
  13. Bake in oven for 8 – 10 minutes, or until golden on bottom
  14. Turn and continue to bake for 8-10 minutes, or until fish flakes easily and is golden brown
  15. Serve with lemon wedges and tartar sauce
