From "the american woman's cookbook", 1938-1977. The book i got this from is so old it has recipes for squirrel! But this fish recipe is completely delicious, and easy too. I serve this with pasta in butter/garlic sauce and boiled greenbeans.

Ingredients

  • Flounder Fillets
  • Butter
  • Flour
  • Dried Onion Flakes
  • Basil
  • Chicken Broth
  • Lemon Juice
  • Pepper
  • Breadcrumbs

Instructions

  1. Arrange fish in a greased baking dish
  2. Melt the butter
  3. Stir in flour, onion flakes & basil
  4. Cook until it starts to bubble
  5. Add chicken broth
  6. Cook 5-10 minutes more, stirring constantly
  7. Add lemon juice + pepper
  8. Pour sauce over fish
  9. Sprinkle with bread crumbs
  10. Bake at 425 for 20 minutes
