Filet Mignon Garlic Toasts

From the weight watchers' website. 2 points per toast. This can be sped up and simplified by purchasing a tube of garlic paste.

Ingredients

  • Cooking Spray
  • Garlic Cloves
  • Olive Oil
  • Fresh Lemon Juice
  • Table Salt
  • Black Pepper
  • Fresh Parsley
  • Beef Tenderloin
  • French Bread

Instructions

  1. Coat a large roasting pan with cooking spray
  2. Set pan on middle rack in oven and then preheat oven to 425f
  3. Combine garlic, oil, lemon juice, salt, pepper and parsley in a small bowl
  4. Mash to a fine paste using back of a wooden spoon
  5. Set aside about 1 / 3 of garlic paste for use on the meat
  6. Wash beef and pat dry with paper towels
  7. Rub about 1 / 3 of garlic paste on meat
  8. Place meat in preheated roasting pan and cook about 22 minutes for medium rare or 25 minutes for medium
  9. Remove meat from oven and place on a cutting board
  10. Loosely cover meat with aluminum foil and let stand 15 to 20 minutes
  11. Reduce oven temperature to 350f
  12. Meanwhile, spread tops of bread slices with garlic paste
  13. Place in a single layer on baking sheets
  14. Bake until slightly toasted, about 5 to 7 minutes
  15. Remove strings from meat and slice against the grain into 32 very thin pieces
  16. Slice each piece in half
  17. Place a slice of meat on each garlic toast and serve
  18. Yields 1 piece per serving
