Congo chicken and okra

Congo chicken and okra

Ingredients

  • Chicken Breasts
  • Onions
  • Salt
  • Tomatoes
  • Green Chili Peppers
  • Gingerroot
  • Water
  • Okra
  • Tomato Paste
  • Rice

Instructions

  1. Place chicken and onion in a heavy saucepan or dutch oven
  2. Sprinkle with salt
  3. Using the fine blade of a grinder, chop tomato, chili peppers and ginger
  4. Add mixture to chicken
  5. Pour in water and bring to boil
  6. Reduce heat and simmer, covered, for about 20 minutes or until chicken is barely tender
  7. Add okra
  8. Stir in tomato paste
  9. Contine simmering, uncovered, until chicken and okra are tender
  10. Place each breast on a individual dinner plate
  11. Divide vegetable and liquid evenly and pour over chicken breast
  12. Serve over 1 / 2 cup rice if desired
