Easy-to-make chicken thighs are a favorite for both kids and adults. They are good served with rice and broccoli.

Easy-to-make chicken thighs are a favorite for both kids and adults. They are good served with rice and broccoli.

Ingredients

  • Chicken Thighs
  • Lime
  • Soy Sauce
  • Garlic Cloves
  • Crushed Red Pepper Flakes
  • Fresh Ginger
  • Olive Oil
  • Cinnamon
  • Cornstarch
  • Water

Instructions

  1. Remove skin from chicken thighs and discard
  2. Place chicken in baking pan
  3. Grate lime rind over chicken
  4. Cut lime in half and squeeze juice over chicken
  5. Add soy sauce, garlic, red pepper flakes, ginger, olive oil and cinnamon
  6. Turn chicken to coat both sides with marinade
  7. Refrigerate for one hour
  8. Preheat oven to 375f
  9. Place chicken in oven and bake for 30-45 minutes
  10. To serve with gravy
  11. Combine 1 t cornstarch with 1 / 2 cup water
  12. Add to pan and stir to mix well
  13. Heat on stove over med heat until mixture thickens
